What does the tolerance at 25 C mean?

It is the accuracy of the buffer at the reference temperature of 25 C. A tighter tolerance means a more precise calibration point.

Which pH values do I need?

Match the values to the range you measure. pH 7.00 is the common starting point, paired with pH 4.00 for acidic samples or pH 10.00 for alkaline samples.
